Ingredients
Sweet Potatoes
4 Sweet potatoes |
2 Large eggs |
1/2 cup White sugar |
1/2 cup Milk |
4 tbsp Softened butter |
1/2 tsp Pure vanilla extract |
1/2 tsp Salt |
Topping
1/2 cup Packed brown sugar |
1/3 cup All purpose flour |
3 tbsp Softened butter |
1/2 cup Chopped pecans |
Amazing Sweet Potato Casserole Directions
- Preheat oven to 325°F
- Peel sweet potatoes and dice into 1 inch cubes
- Place sweet potatoes in a saucepan and add enough water to cover by one inch
- Cook sweet potatoes on medium-high heat until tender
- Drain sweet potatoes and transfer to a large bowl
- Use a potato masher or a fork to mash sweet potatoes
- Add eggs, sugar, milk, butter, vanilla and salt.
- Mix until smooth
- Transfer mixture to a 9x13 inch baking dish
- In a medium bowl mix brown sugar and flour
- Add butter and combine until mixture resembles wet sand
- Add pecans, stir to combine. The mixture should be loose enough to sprinkle
- Sprinkle mixture over sweet potatoes in the baking dish
- Bake for 45 minutes or until topping is lightly browned
