3 tbsp Unsalted butter
1 Large yellow onion
4 Cloves of garlic
3 tbsp Olive oil
2 lbs Mushrooms
1/2 cup White wine
1/2 cup All purpose flour
3 quarts Chicken stock
1 1/2 cups Heavy whipping cream
3 tbsp Fresh parsley
1 tbsp Fresh thyme

Cream of Mushroom Soup Directions

    1. Add the butter to a large pot over low heat and cook onions until well carmelized
    2. Stir in garlic and cook until fragrant
    3. Add mushrooms and cook until most of water has been removed from mushrooms
    4. Deglaze with white wine and cook until absorbed
    5. Mix in flour and stir to combine
    6. Add chicken stock and bring to a boil, cook until thickened
    7. Puree soup in food processor until smooth
    8. Finish with cream, herbs, salt and pepper
