Cream of Mushroom Soup

3 tbsp Unsalted butter |
1 Large yellow onion |
4 Cloves of garlic |
3 tbsp Olive oil |
2 lbs Mushrooms |
1/2 cup White wine |
1/2 cup All purpose flour |
3 quarts Chicken stock |
1 1/2 cups Heavy whipping cream |
3 tbsp Fresh parsley |
1 tbsp Fresh thyme |
Cream of Mushroom Soup Directions
- Add the butter to a large pot over low heat and cook onions until well carmelized
- Stir in garlic and cook until fragrant
- Add mushrooms and cook until most of water has been removed from mushrooms
- Deglaze with white wine and cook until absorbed
- Mix in flour and stir to combine
- Add chicken stock and bring to a boil, cook until thickened
- Puree soup in food processor until smooth
- Finish with cream, herbs, salt and pepper
