Slow Cooker Creamy Beef Stroganoff

This is a great way to make a hot filling dinner ahead of time with not a lot of work at the end. And the chuck roast will be so tender you will be able to pull it apart with a fork. I prefer to use bigger noodles in my Beef Stroganoff but you can change it to your preference. Some of the spice measurements are just a starting point. Add more or less to taste.

3 lbs Chuck Roast
10 oz Can of Cream of Mushroom Soup
20 oz Beef Broth
8 oz Sliced Baby Bella Mushrooms
2 tsp Minced Garlic
2 tsp Dijon Mustard (Yellow or Stone Ground if you prefer)
1/2 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Paprika
1 Medium Onion (Chopped)
12 oz Egg Noodles
8 oz Cream Cheese (Softened)
6 oz Sour Cream
2 tsp Worcestershire Sauce

Slow Cooker Creamy Beef Stroganoff Directions

  1. In a skillet, cook both the onions and mushrooms until they are soft. Place in your slow cooker.
  2. (Optional) Season your chuck roast on all sides with salt, pepper, and garlic powder if you have it. In a skillet, on high heat, add some avacado oil (olive oil) and sear your chuck roast for about 2-3 minutes on each side. You can cut your chuck roast into large cubes if you don't have a large skillet or want to get more sear on each bite. You will be adding the chuck roast in the next few steps.
  3. In the slow cooker add your cream of mushroom. Then fill up that same can twice with beef broth to give you 20oz total and dump in the slow cooker.
  4. Add your remaining ingredients, except for the noodles, creams cheese, and sour cream.
  5. Add the chuck roast on top and submerge it in the juices.
  6. Set slow cooker to High for about 6 hours or on Low for 8 - 10 hours. You want your roast to be fork tender.
  7. Once your roast is done take it out of the slow cooker and shred it.
  8. While your roast is out of the slow cooker, cut your cream cheese into small cubes and add it in. Also add in your sour cream and whisk it all together until your cream cheese and sour cream is melted into it.
  9. Add the chuck roast back to the slow cooker.
  10. Cook your noodles in a pot per the instructions and add to your slow cooker.
